Welcome to Project Squishyplum, my adventures in eating a whole-food, plant-based diet.
I love food: I love eating it, I love reading about it, and I love learning about it. I have an MSc in Clinical & Public Health Nutrition from the University of Dundee in Scotland and a Certificate in Plant-based Nutrition from eCornell.
After dabbling in vegetarianism since my teens, I moved to a vegan diet in 2011 and was pleased with the results. I dropped a bit of weight and felt happier and calmer. And I enjoyed the idea of my personal food choices being more aligned with my values and ethics, while also improving animal welfare and reducing my environmental footprint. Bonus!
My goal is to raise the bar and eliminate processed vegan foods from my diet. Instead, the focus in on eating whole plant foods — and consequently easing up on the fat and sugar that typically characterize processed foods. I’m sharing some thoughts about my journey here with the hope that they both inspire and inform.
